How to get your kids to eat greens: Green Smoothie Popsicles

Even I’m now the self-proclaimed queen of greens, I was not that way growing up. As a kid I would not eat any cooked vegetables. Raw veggies on the other hand were awesome, my favorites might have been cucumber, carrots and cabbage (I remember eating lots of those). I wish smoothies were a hit back then, I’m sure I would’ve enjoyed them as much as I enjoyed milkshakes. If my mom would’ve made those smoothies into popsicles it would’ve been even cooler (literally), because I do remember making popsicles from regular juice. I think these Green Smoothie Popsicles are brilliant idea to sneak in more greens to your kid’s (and your) diet. Try them and let me know how it went.

Green Smoothie Popsicles

1 1/2 cups almond milk

2 bananas

2 tbsp almond butter

Big sprinkle of cinnamon

1 large handful of spinach

Optional for more sweetness: 2 dates (soaked in water for at least 1 hr to soften) or stevia

Instructions

Put all ingredients into a blender and blend on high until smooth. Taste it! If it needs more sweetness, add it in.Distribute evenly into molds and freeze until frozen, at least 6 hours.

TIP: For an easy release, run the underside of the molds under hot water for 10 seconds.

TIP 2: Remove from the stick and throw in your smoothies. They’re like big yummy ice cubes!

TIP 3: Instead of spinach you can use any greens powder (this is my personal favorite)
