Blonde Beauty Truffles

After doing a spring cleanse I wanted to find healthier sweet treats going forward, preferably homemade. I started browsing through all my cookbooks and found this recipe from Kimberly Snyder’s Beauty Detox Power. These Blonde Beauty Truffles took just 5 minutes to make and stay good in the fridge or freezer for a long while. Mine only lasted about 3 days because both I and husband couldn’t stay away from them :). I also brought one to work each day to have as a 100% guilt-free healthy snack.

 Blonde Beauty Truffles

(about 12 truffles)

2/3 cup ground raw almonds
2 tablespoons maple syrup
1/2 tsp sea salt
cinnamon to taste (my own addition)

-Process the coconut flakes in a food processor to make a powder. Add the ground almonds and pulse to combine. Add maple syrup, coconut oil, vanilla extract and sea salt, and process again to blend well.

-Roll the coconut-almond mixture into balls the size of gum balls and arrange them on a plate. Cover and refrigerate for at least 10 mins before serving so they harden and chill slightly.
