VEGAN APPLE CRISP

Sweets for my sweet tooth… I love desserts and you can find me often drooling behind bakery windows. I’m pretty good at not buying sweet things for the house, but when the cravings hit I’m quickly whipping things up in the kitchen based on whatever ingredients and imagination I have. And I have tons of imagination when it comes to making desserts out of the pantry items. Here’s a wonderful and quick Vegan Apple Crisp recipe for you.

APPLE CRISP (vegan)

(serves 4-5 people)
INGREDIENTS
8 small-medium apples, chopped (about 6 cups)
dash lemon juice
1/3 cup coconut sugar
1 tbsp cornstarch
1/2 tsp cinnamon
pinch of salt


 TOPPING 
1/3 cup coconut sugar
1/4 cup gluten free flour blend
1/2 cup rolled oats
1/4 cup almond meal (or use more flour blend)
1 teaspoon cinnamon
1/3 cup (about 1/2 one stick) non-dairy butter melted (or coconut oil which is what I used)


 INSTRUCTIONS 
Preheat oven to 375 degrees and lightly grease a 9×9 baking dish. Add apples to a large bowl and sprinkle with lemon juice. Toss to coat with sugar, cornstarch, cinnamon, and salt. Transfer to baking dish and set aside. Rinse and dry bowl and add brown sugar, flour, meal, oats, cinnamon and stir. Add melted butter and mix well. Sprinkle topping over the apples and bake until apples are soft and topping is golden brown (between 45 minutes to 1 hour).


Serve hot with dairy-free vanilla ice cream or vanilla cashew cream.
