I’m honored to be part of the Meatless Monday bloggers which means that I’ll be joining some pretty amazing team. Therefore, hopefully, from now on you will start seeing some more quality recipes in this blog. Being part of this community gives me motivation and a nice push to try harder to create pretty, delicious and healthy dishes.
Here’s a lunch from last week when I was in the mood for something crunchy. We had a bag of Way Better Snacks’ sweet potato tortilla chips and fresh cilantro in the house and that’s where the idea came. Nacho bowl. I served it with a cocktail named Prickly Pear Potion which was created from whatever fruits we had in the house.
Nacho Bowl
Broccoli (small florets)
Kale (chopped)
Soy crumbs (mexican flavored)
Onion
Juice from half lime
Lightly sauté the above ingredients in coconut oil and transfer to a baking dish.
Top with:
Sweet potato tortilla chips
Chopped tomatoes
Chopped bell peppers
Diced raw onion
Vegan cheese
Bake in the oven for about 10 minutes at 400 degrees.
Sprinkle on top:
chopped lettuce
raw onion
tomatoes
avocado chunks mixed with lime juice
fresh cilantro (I love the smell of fresh cilantro!)
Taco sauce
Prickly Pear Potion
– 1 prickly pear
– Juice from 1 lime
– Juice from 1 lemon
– 1 cup coconut water
