February and March are filled with celebrations for us. Latest one was our anniversary and due to that I’m finally a proud owner of Vitamix! It’s definitely going to be used way more than any other kitchen gadget in our home. My daily green smoothie gets ready in seconds when my old blender took it’s sweet time and was still not that smooth. So happy!
For “after-dinner -smoothies” I made this yellow one that had fresh mango, orange, green tea and ice. For my second glass I added some mango vodka as well… Delicious tropical cocktail! Perfect for March 🙂
For breakfast I made this bright colored smoothie that had cactus fruit, orange, apple and strawberries. No added sugar needed!
This was the first time in my life eating prickly pear or cactus fruit, also called nopales. It is promoted for treating diabetes, high cholesterol, obesity and hangovers. It is also touted for its antiviral and anti-inflammatory properties. Prickly pear cactus is popular in many areas of the world, particularly Latin America, because it is high in fiber, antioxidants and carotenoids. The red ones are quite sweet and juicy and they come with hard little seeds, but those can just be swallowed.
Also, be careful when handling the fruit since it’s not called the cactus fruit for no reason. I got to experience that first hand… The dark nubs on the skin contain sharp spines, but these are easily removed by slicing off the ends of the fruit, making lengthwise incisions, and peeling back the rind to reveal the luscious flesh.
