Easy Sweet Potato Flatbreads

I’m a huge fan of homemade bread (and bread in general) and always looking for great, simple recipes. I’ve been making these flatbreadsĀ to bring with me to work for breakfast and snacks (served with hummus and raw cut veggies like cucumber, bell pepper, tomato), but it was time to try something new.

Since I love sweet potatoes, I decided to try them in this flatbread recipe. I love getting the sweetness without using any actual sweeteners like sugar or maple syrup so these easy sweet potato flatbreads are just simply perfect. If you have sweet tooth like I do, eating sweet vegetables, like sweet potatoes, can help you fight cravings.

Easy Sweet Potato Flatbreads

1 cup mashed sweet potatoes (about 1/2 or 1 sweet potato, depending on the size)
1 tbsp flax meal + 3 tbsp water (or you can use 1 egg if not vegan)
1 1/4 cup oat flour
1 tsp sea salt
1 tsp baking powder
2 tbsp olive oil (or coconut oil)

  1. Heat oven to 400 F.
  2. Mix cooled sweet potato well with the flax egg.
  3. Add rest of the ingredients in the mix and mix well. Dough will be sticky.
  4. Bake 20-25 mins.
  5. Enjoy with coconut butter, hummus or vegan butter

P.S. I love seeds and herbs in my breads so I added sunflower seeds, thyme and hemp hearts to up the nutrition and flavor. Try adding some of your favorites!
