How to cook tasty vegetables

Secret to making people like veggies is to make them taste awesome instead of them being the bland side dish. Make them stand out like they’re the main deal! But how to cook tasty vegetables is the question that gets thrown around a lot. First, I’ve learned that roasting veggies really brings out their flavor so I always roast them in the 400 F oven  before throwing them in soups or stews, or eating them in general. Secondly, season your veggies well with herbs, oil, salt, pepper and garlic. As a plus, your home will smell like a food heaven.img_6493 Sometimes I like to keep things simple with just salt, pepper and garlic, and other times I go a little spice-nuts and create the weirdest flavor combinations. Nevertheless, it always comes out delicious. My favorite spices are: cinnamon (I put it on everything), thyme, smoked paprika and ginger. My favorite sauce: Louisiana Hot Sauce. Here’s how to season your veggies and make them rockstars of your dinner party:

Sauteed shallots, onion and garlic – goes with any veggie. This is the base flavor of all my vegetables.

Ginger – Amazing with bok choy or in any stir-fry

Cinnamon and nutmeg – Squashes, potatoes, pumpkins

Maple syrup – Brussels sprouts

Tamari or liquid aminosDark leafy greens

Nutmeg – Dark leafy greens

Gomasio – Awesome mixture of sesame seeds, sea salt and seaweed. Goes pretty much with everything.

Smoked Paprika – Great for grilling. Goes well with pretty much any veggie.

Cayenne & Cinnamon – Roasted sweet potatoes

Vegan Parmesan – Sprinkle over sliced zucchini and tomato, bake until slightly browned. How to make vegan parmesan (you can also buy it): combine 3 tbsp nutritional yeast (my fave), 3/4 cup cashews, 1/4 tsp garlic powder and 3/4 tsp sea salt. Done.

Herbs de Provence – Love it with roasted potatoes and mushrooms.

Lemon & Mustard – Perfect for green beans.

Aged Balsamic Vinegar (make sure it doesn’t have caramel color) – Drizzle on everything. Goes especially well with tomatoes and broccoli.

Pesto – Toss with zucchini noodles, or quinoa pasta.img_9002

What about raw vegetables then, you asked. I like them best in their natural form and never add salt or sugar on them (I see people do this often and I find it super weird). Raw veggies, that were the only kind of veggies I agreed to eat as a child, get more interesting when you cut them nice and handy, and serve them with dips like guacamole, hummus, pesto or salsa.

  2. I’ve learned to cook my veggies like a pro but give me a chicken breast and I would have no idea what to do with it. I’m okay with that

    1. When I have to cook meat for my husband (happens only once in a blue moon nowadays) I just stick it in the oven and he’ll take it out whenever he thinks it’s ready. That’s how much I’m willing to cook with meat 🙂
