I had so much fun being part of our Beauty Detox Potluck the other weekend. We all “met” through Kimberly Snyder’s Beauty Detox Food group on Facebook and later formed our own local San Francisco Bay Area group for get-togethers and events supporting the Beauty Detox lifestyle. So far we’ve had dinner in Oakland, attended the World Vegan Fest in Berkeley and our latest was a potluck in a beautiful home in Marin County.
For appetizers we had these delicious endive boats filled with red pepper cashew “cheese”, walnuts and micro greens. Similar recipe for the “cheese” can be found here. This is the perfect combo of creamy and crunchy to wake up your taste buds. These are great neat finger food for any party or just a healthy snack to have around. You can easily play with the fillings as well and switch the bell pepper to beets, cilantro, olives or sun-dried tomatoes. There are no rules here!

Beetroot rice Indian style
1 cup rice
2 medium size beetroots
1 small onion sliced
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1/2 tsp Garam masala
6-7 black peppercorns
1 inch cinnamon stick
7-8 curry leaves
Cilantro ( for garnish )
Green chilies (optional )
Soak the rice for 30 min. Cook the rice and once cooked, spread it on a plate so that it cools down. Meanwhile, grate the beetroot. Heat oil in a pan. Add mustard seeds, cumin seeds, cinnamon stick, black peppercorns, green chili, curry leaves and sliced onion. Cook till onion becomes translucent. Add the grated beetroot and cook for 7-8 min. Now add the cooked rice, garam masala and salt and mix well. Cook on low flame for 10 min so that everything is flavored. Garnish with cilantro.
Here’s the final plate. We started with Spiced Carrot Soup (recipe) that was perfectly light yet creamy. There was also Roasted Honey Nut Squash with vegan feta cheese from Butcher’s Son (I need to visit ASAP!) and aged balsamic on a bed of mixed greens. Weather was just perfect to sit outdoors to enjoy the food, girly chit chat and the gorgeous garden.
After we finished eating and did a little garden tour (My dream garden! So many edible plants!) we ate a little more. For dessert we had Coconut Vanilla Tea straight from Hawaii (yes, we’re fancy like that!), Pumpkin Pie (recipe) and Raw Cheesecakes around the firepit. What a perfect ladies luncheon.
