Berry Chia Pudding

Happy September! Can’t believe the fall time is here already! It is suppose to be really nice in Northern California this time of the year, because it is actually our summer. How cool!

I’ve started my September with a bang attending a couple of Meetups here on our island and getting to know new people, despite my social anxiety issue. “I am feeling the fear, but doing it anyway”. “Fear is just a feeling and it has no power over my actions”. I have lots of social anxiety mantras in store :).

What else? I’ve enjoyed exercising, mainly riding my bicycle, Bodypump, Bodyflow and Anusara Yoga classes at the gym. I also upped my weights at Bodypump class. Yeah! Getting strong! My Health Coach is helping me with Candida control (yes, of course coaches have coaches!) so that is one health issue I’m focusing my attention to right now. Being active helps keep my mind off sugar. I’ve also been making chia puddings, green smoothies and green smoothie popsicles so I always have something sweet at home when cravings hit. The sweetness in these foods comes from dates, bananas and berries. Here’s the recipe I used for my Berry Chia Pudding.

Berry Chia Pudding

2 cups plant-based milk (coconut, almond, oat, rice, hemp, etc.)
1/3 cup chia seeds
1-2 dates (soak to soften before blending if you don’t have high-speed blender)
1 cup any berries (I used mixed frozen berries)
1 teaspoon cinnamon

Stir together all the ingredients. Chill in the refrigerator for at least 4 hours or until the chia seeds puff and expand. I normally do this the night before so I can have it for breakfast in the morning. Top with whatever you like: cut fruit, more berries, banana, toasted coconut, bee pollen etc. I used hemp hearts and dark chocolate covered cacao nibs.


Pudding may be stored in an airtight container in the refrigerator for up to 3 days. Before serving, stir once and spoon into serving dishes.

  1. Social anxiety can be overcome. I know what you’re talking about. I come across very talkative yet sometimes I feel little and a bit scared inside. Just like you, I go out and live regardless. And that feels great.

  2. How funny i was just going to ask you for any chia seed pudding recipes that you might have! You read my mind friend! I have always wondered if i had candida or not. Correct me if i got my info mixed up i thought even fruit sugar should be avoided? Things low in sugar are ok like green apples and blueberries? Whats your take? And cant wait to try this recipe thanks for sharing 🙂

    1. Great minds think alike!:) I just had chia pudding for lunch at work. When I do my annual 30-day Spring Candida Cleanse I leave out all fruit except green apples and lemons/limes. And of course eliminate gluten, alcohol and caffeine as well. Berries are low-sugar so it’s ok as well, but I didn’t have them either.
