Tacos have been our easy weeknight dinner tradition for years because of the unlimited possibilities with what to stuff them with. Chopped raw onions, tomato, beans, lettuce, bell peppers, olives, sweet corn, maybe some Trader Joe’s soy chorizo for me and some chopped chicken for husband. You can also use tempeh, barbequed eggplant, tofu, seitan, cauliflower and so on. Or how do you like the sound of these: Black Bean Tacos with Cilantro-Infused Tortillas, Vegan Tempeh Tacos with Avocado-Lime Crema, Barbecue Eggplant Tacos , Thai Lemongrass Tofu Tacos with Lime-Sriracha Aioli and Basil-Cucumber Salsa, Thai “Pulled Pork” Tacos, Chipotle Cauliflower Tacos, Vegan Buffalo Tacos, Strawberry Chipotle Sausage Kale Tacos? I say YUMMY!
Here I also used some red cabbage since I like a good crunch. And I love raw cabbage. Always did.
